Bob's Wellfleet Oysters Rocky Recipe
This classic is a must-have recipe for any oyster lover. It's great for a party!
Ingredients
- 1/2 Tbsp. olive oil
- 1/2 Tbsp. butter
- a few shallots, chopped
- 1 tsp. ground fennel seed
- 3/4 block cream cheese
- 8 oz. baby spinach
- 3-4 dozen Wellfleet oysters
- Parmesan Reggiano
- 2 oz. anise-flavored liquor (eg. Pernod or Sambuca), some use absinthe!
- Preheat the broiler.
- Make the sauce -
Sauté the shallots in the olive oil and butter, add the ground fennel seed. Blanch the baby spinach, drain well and mix with the shallots and cream cheese.
- Open the oysters. Put them in a pan atop crumpled aluminum foil or rock salt. Top each oyster with a dab of the sauce, a bit of parmesan reggiano and then 3-4 drops of liquor.
- Place under the preheated broiler and broil until the edges begin to curl (a few minutes).
